Ketosis is when you are living on the fat in your body instead of glucose from carbohydrates. Ketosis causes an increase in mitochondrial glutathione – a very good thing. Ketogenic diets reduce glycation and glycation end products by reducing baseline blood sugar levels. Glycation occurs when proteins and fats combine with sugars. Glycation causes our cells to age prematurely and become more susceptible to damage.

Glycation end products (also called advanced glycation end products – AGEs) enter our bodies through the cooking processes. When you grill, roast, broil or otherwise impart burn marks (charring) on the food, there is an increase in AGEs. Your body can naturally get rid of AGEs, but it takes time. We should limit the intake of foods that increase AGEs in our bodies.

Ketogenic diets also reduce triglycerides. When we have elevated levels of triglycerides, there is the potential for increased AGEs. When we reduce blood sugar (reducing or eliminating carbohydrates), our bodies gain in three immediate ways:

● Insulin levels are reduced
● AGEs are reduced
● Inflammation is reduced

These factors increase our longevity. Again, in any kind of ketogenic diet, you need balanced nutrition. To attain balanced nutrition, you do not need grains and dairy, to achieve that balance. Look for nutrient dense foods – colored fruits and vegetables contain many more per ounce than grains and dairy.
